Recipe To Make Soy Yogurt

Soy yogurt is not commonly found in supermarkets and deli's. It is often available in your local health shop. For those who can’t get enough of soy yogurt, though, you can have the option of making it yourself.

Homemade recipe :
All you need is 5 cups of soy milk, half cup starter culture yogurt purchased commercially (may be plain yogurt from the store), 3/4 tsp. agar powder, 2 tsp. tapioca starch dissolved in 1/4 cup water, some salt and a little bit of sugar, to feed your starter culture. You can either purchase soy milk or make it yourself, soaking soya beans in a cup of water overnight, and rinsing them repeatedly. If you want to eliminate the bean flavor from your yogurt, rub the beans together in your hands until the skins come off. Rinse several times, making sure you eliminate as much skins as you can. Put the beans in a blender, adding a little commercial soy milk for creaminess.

Before cooking, make sure that all your utensils are sterilized in boiling water, including the jars that will contain your yogurt.

Start by mixing half cup of soy milk, agar powder, and the tapioca starch. Whisk until you get a smooth consistency. Add 2 cups of heated soymilk, blending all ingredients until smooth. Set the microwave to high, and put the mixture in for a minute. Take it out, stir, and put it back for another minute. Repeat this procedure two more times, then add in the remaining soy milk. Put in the refrigerator wait for the mixture to cool to 115 degrees Fahrenheit. Use a candy thermometer to get accurate temperature. Once it is cooled, add the starter culture that was kept at room temperature. Whisk it well to distribute the culture evenly. Transfer the mixture into your jars, cover and keep in the refrigerator for about 12 hours, until you get the characteristic tart flavor. The advantage of making soy yogurt yourself is that you get to control the tartness you desired. Before eating, you can add fresh fruits for added flavor. The yogurt you prepared will last for about a week.
